2c. hoosier persimmon pulp (you can buy it seasonally at dillman farm)
1/4 stick oleo, melted (that's old school for 'butter')
2 eggs (3 if they're tiny)
2 c. sifted flour
2 1/2c. milk
sift dry ingredients together and add to all other ingredients. bake in greased and floured 9 x 13 x 2 inch pan in slow oven at 325 degrees for 45 minutes, or until edges curl away from the pan.
And now for the best part… mama's icing:
melt 1 c. butter in a pan on low heat. stir in 1 c. sugar. add in 1 c. flour, and mix until you create a thick paste. add in enough milk to create an 'icing' consistency. add in cinnamon to taste. pour over pudding. store in a chilled area.
